Tom Yum Goong

5-7 Shrimps

2-3 Straw mushrooms

1 Lemon glass

3 Kaffir Lime leaves

½ rhizome Galangal

1 Tomato (Optional)

1 Coriander root

½ rhizome Shallot(Optional)

3-4 Bird Chilies

2 Tablespoon Non-sweet milk

1 Tablespoon Fish sauce

1 Teaspoon Tom Yum paste

1 Tablespoon Lime juice

½ Teaspoon Sugar

250 ml Water (or soup stock)

Peel the Shrimps except tail (Optional).You can cut the back of shrimp and bring black vessel out. Then cut straw mushrooms to halves. And cut tomato to four pieces.

Cut galangal to 3mm thickness. Cut lemon glass to 2” .Then pound them to rough.And pound bird chilies and Coriander root too. Cut kaffir leaves to four pieces. Then chop shallot.

Boil water with high temperature. Put Tom Yum paste, Lemon glass, Galangal, Coriander root and Shallot. When the water boil, Put the Shrimps and Straw mushrooms.

When the Shrimp turn to pink. Turn to medium temperature. Then put the milk and stir them well. Then put the Fish sauce, Lime juice and Sugar. Stir them well again.

Then put the bird chilies and Kaffir lime leave. Stir them again. Close the fire one minute later.

Serve with Thai Fragrant Rice.
